Pina Colada Fruit Dip

There was a time when this was served at any bridal or baby shower you went to.

20 ounces pineapple -- crushed, canned
2 tablespoons corn starch
2 3 1/2 ounce coconut cream pudding mix -- instant
2 cups milk
1/2 teaspoon rum extract
8 ounces Cool Whip®

Mix together in small pan the crushed pineapple and corn starch. Cook over medium heat until thickened. Chill. Combine pudding mix, milk and extract. Mix together with pineapple. Fold in cool whip and chill. Serve with fresh fruit chunks and pieces of pound cake or angel food cake.

Marty's Cheese Spread

My son is a fabulous cook.  He became interested at about age 12, and this is one of the first things he concocted.  Absolutely delicious appetizer.

16 ounces cream cheese -- softened
1/2 cup mayonnaise
1/4 cup sour cream
1/8 teaspoon tabasco sauce
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon oregano -- leaves
1/4 teaspoon basil leaves
1/4 teaspoon thyme -- leaves
1/4 cup Parmesan cheese -- grated
1/8 teaspoon pepper

Whip all ingredients together and use to fill raw veggies or serve on crackers or toast etc.




Layered Mexican Dip

When my kids were kids, we had this along with a hot chili cheese dip every Christmas Day.  Karri would eat so much, she never had room for Christmas dinner...


1 can refried beans
2 avocado -- mashed
1/4 cup salsa
1 tablespoon lemon juice
1 teaspoon garlic salt
1 pint sour cream
2 cups cheddar cheese -- grated
1 tomato -- chopped
2 cups lettuce -- shredded
1/2 cup green onion -- sliced

Mash together avacado, salsa, lemon juice and garlic salt. layer ingredients in flat bottomed pan in this order: refried beans, avacado mixture, sour cream, lettuce, tomatoes, green onions. Let chill & serve with tortilla chips.


Hot Bean Dip

Fondue Pot?  Boy is THIS recipe OLD!


1 can refried beans
2 cups enchilada sauce
8 ounces green chiles -- chopped, canned
8 ounces black olives -- sliced
4 cups Monterey jack cheese -- shredded
4 cups cheddar cheese -- shredded
1/2 cup green onion -- sliced

Combine all ingredients in fondue pot and heat at cheese setting


Hot Artichoke Dip



8 ounces mozzarella cheese -- shredded
8 ounces cream cheese -- softened
4 ounces parmesan cheese -- shredded
3 jars artichoke hearts -- marinated

Carefully warm in microwave, stirring every few seconds.

Chili Cheese Dip

I had to put this in for my daughter Karri's benefit.  As a kid, she ate this until she exuded the smell from her tiny body...

1 can Hormel chili without beans
1 pound Velveta

Melt together in fondue pot set on cheese setting or melt in microwave, stirring every minute or so.
