Seven Minute Frosting

My mother's recipe.  I guarantee it is better than any other fluffy frosting recipe you will ever find!

This has always been my daughter Karri's favorite.  When Kimberly joined the family it became HER favorite, too.  Amazing on chocolate cake.

2 egg whites
1/3 cup clear corn syrup
3/4 cup sugar
2 tablespoons water
1/4 teaspoon cream of tartar
dash salt
1 teaspoon vanilla

Mix all ingredients except vanilla in top of double boiler over boiling water.  You can use a heat safe bowl on top of a pan of boiling water if you don't have a double boiler.)  Beat with electric mixer on high until stiff peaks form. Remove from heat and mix in vanilla. Spread on cake while still warm.

Chocolate Frosting

That tiny bit of almond extract will have everyone wondering, "Why does this frosting taste so good"?

3 cups confectioner's sugar
3/4 cup cocoa powder
1 stick butter -- softened
4 tablespoons heavy cream
1 teaspoon vanilla
1/2 teaspoon almond extract

Mix together cocoa and sugar. Beat butter and 1/3 of sugar mixture, then add 1 tbsp. cream. Continue adding sugar and then cream. Add extracts last.

Cream Cheese Frosting/Filling

This is what I use (along with pecans) to fill chocolate, spice or pumpkin rolls.

8 ounces cream cheese -- softened
5 tablespoons butter -- softened
1 1/2 cups powdered sugar
1 teaspoon vanilla

Cream together cheese and vanilla. (Cheese should be soft but still cool.)
Then whip in sugar and vanilla last.

Coconut- Pecan Frosting

Absolute heaven on German Chocolate cake.  John's request every birthday...

1 can evaporated milk
1 1/2 cups sugar
4 egg yolks
3/4 cup butter
1 1/2 teaspoons vanilla
2 cups coconut
1 1/2 cups pecans

Mix together milk, sugar, butter, egg yolks, and vanilla. Cook and stir over medium heat until thickened. Remove from heat and add coconut and pecans. Let cool, beating occasionally.

Beat butter and gradually add sugar. While adding sugar add milk 1 tbsp. at a time. When texture is right add vanilla. (or other flavoring).

NOTES : You can substitute cream cheese for the butter.
