My cousin-in-law Jodi's delicious recipe. The first time I had zucchini bread it was this one, and even though it is a simple recipe, no others have ever really compared.
3 eggs
2 cups sugar
2/3 cup oil
3 teaspoons vanilla
2 cups zucchini -- shredded
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
3 teaspoons cinnamon
1 teaspoon salt
1 cup nuts -- chopped
Beat together eggs, sugar and oil. Add vanilla and zucchini to eggs. Mix together all dry ingredients and then add to zucchini-egg mixture. Fold in nuts. Bake at 350 degrees for 50 to 60 minutes.
