Whole Wheat Bread - handmade


I used to make this bread every two weeks on "Bread Making Day"...I can still remember how wonderful the house smelled...


3 packages active dry yeast
3/4 cup lukewarm water
3/4 cup sugar
6 teaspoons salt
6 tablespoons oil
3 cups milk
3 cups boiling water
7 1/2 cups white flour
9 cups wheat flour

Dissolve yeast in lukewarm water. In very large bowl mix sugar, salt, oil, milk, and boiling water. When mixture is lukewarm add yeast and white flour. Slowly add whole wheat flour. When dough is stiff enough to handle turn onto floured board and knead until dough is smooth and elastic. Place in an oiled bowl, cover and let rise until doubled in size. Punch down and let rise again. Shape into 5 loaves. Put into greased loaf pans and let rise again. Bake at 400 degrees for 45 minutes or until golden brown and loaves sound hollow when tapped with fingers.

(You can make this same recipe using only white flour for basic white bread)
