If you bake these in tiny muffin tins they are a terrific appetizer!
1 cup cornmeal
1 cup colby cheese -- grated
1 tablespoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
20 3/4 ounces corn, cream-style -- canned
1 cup sour cream
2 eggs
1/3 cup oil
2 tablespoons green chiles -- chopped,canned
Mix together all dry ingredients. In separate large bowl mix together all moist ingredients then add dry ingredients. Bake at 400 degrees for 20 minutes in greased muffin tins.
For a bit extra spice, you can add finely chopped fresh jalapenos or a dash of dried chipotle seasoning.
