Cornbread

Good, basic cornbread...nothing better.

1 cup cornmeal
1 cup flour
1/4 cup sugar (see note)
4 tsp baking powder
3/4 tsp. salt
2 large eggs
1 cup  milk
1/4cup oil

Mix together dry ingredients. In separate bowl slightly beat eggs. Add milk and oil. Mix with dry ingredients.
Spoon batter into greased 8 inch square pan.  Bake at 425 degrees for 20 -25 minutes.

NOTE:  Depending on your preference, you can use the 1/4 cup sugar, or cut it down to 2 TBSP.  which is best if you are using this recipe to make stuffing with.  You can't eliminate the sugar altogether, though.  It will  change the texture of the cornbread in a NOT good way.
