1 English cucumber, diced
1 red bell pepper - diced
1 bunch green onions, including tops - sliced
1/2 bunch Italian parsley leaves - chopped
1/2 pkg. sweet cherry tomatoes - halved or quartered
1/2 cup chopped kalamata olives
2 cans garbanzo beans - rinsed and drained
DRESSING
3 TBSP olive oil
3 TBSP red wine vinegar
1 TBSP dijon mustard
1 tsp. dried oregano
salt and pepper to taste
