Brown Rice Pilaf in Crockpot

Easy way to "set and forget" this really good rice dish.

1 cup brown rice. (I used Lundfords Organic Short Grain)
2 cups chicken broth
1 small onion, finely diced
2 cloves garlic, minced
3 Tbsp. olive oil

Saute onion in olive oil until translucent, add garlic and rice.  Continue to stir for 2 minutes.  Pour into crockpot that has been sprayed with non stick spray.  Add chicken broth.  Stir.  Cook on HIGH for 2 hours.
