Southwestern Rice & Olive Salad

A nice side dish when having any type of "Mexican" food.

2 1/2 cups rice -- cooked
3/4 cup black olives -- sliced
1/2 cup corn
1/2 cup red bell pepper -- chopped
1/2 cup tomato -- chopped
1/4 cup green onion -- sliced
2 tablespoons cilantro -- chopped
1 tablespoon jalapeno -- chopped

DRESSING
1/3 cup sour cream - low fat
2 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon cumin
1/2 teaspoon salt

Mix dressing ingredients in large bowl. Add rice to dressing, mix to coat. Toss in remaining ingredients.
