This is the basic recipe, but look below it for all the things I add to it!
2 teaspoons salt
4 teaspoons sugar
1 teaspoon pepper
1 teaspoon ginger
2 tablespoons soy sauce
1/2 cup oil
6 tablespoons rice vinegar
1 cup red cabbage -- shredded
1 head Chinese cabbage -- chopped
1 can water chestnuts, rinsed and chopped
4 chicken breast halves
1 bunch green onions -- sliced
1 cup cashews -- salted
2 cups chow mein noodles
Mix together first 7 ingredients. Let sit.
Boil chicken breasts til done. Let cool and shred into bite sized pieces.
Chop largel head of chinese (or Napa) cabbage into bite size chunks, toss in chicken, onions, cashews and then mix in dressing. Let chill. Serve with noodles sprinkled on top.
You can also use the white rice noodles that you puff up in oil as a bed for the salad instead of the chow mein noodles.
adding shredded carrots, diced pineapple, mandarine oranges, or edamame makes it even better!
